Curries of the world

We welcome our guest tutor Peter Lien back for another course in our 'World Cuisines' series. This time we're exploring curries.

When we think of curry we immediately think of India, but curries are made wherever spices are grown or traded, from the Caribbean in the West,  to South East Asia and even Japan in the East.

Styles vary from those fragrant with lemongrass and galangal, to thick gravies of creamy coconut and rich onion and tomato that can accompany a range of fish, meat and vegetables. Join Peter to make curry pastes from scratch and spice blends to produce some fantastic aromatic dishes from all over the world.

You'll work in a group with your fellow cooks to produce five different curries and the hands on element will finish around 1.30pm when you'll sit down to eat.
